I can kinda understand your point of view. I have looked through Czerny's op. 139, 599, and 823, and found that he is not so wonderful in composing easy piano music.
All of those pieces are too much alike.

However, I can kinda understand your teacher's point of view. Most of the great composers have been too busy composing for virtuosos to think about anyone else. What "modern adult piano tutor books" do you have in mind?
