I see no accordion music marked at "easy skill level" right now, unfortunately, our repertoire for that instrument is somewhat limited.
But by browsing among the titles marked as intermediate" I found some titles that I think could work pretty well for your student (maybe those were marked incorrectly as "intermediate" by Hal Leonard?)

I think you can understand from the first-page preview if a title may be suitable for your student. You can always ask for a refund in case you buy a piece that ends up not fitting well your needs.
So many of the LO Anzhagi instructional books now seem to have gone out of print which is nothing short of a catastrophy as it was just about the only comprehensive accordion method for the continental chromatic freebass accordion. Do you have anything to offer that could replace this wonderful system?

Unfortunately at the moment, we don't have any accordion method in digital format to offer you, but I found a copy of the method by Anzaghi on Sheet Music Plus. Despite its high price, it seems to be available:
